Sugar Paste

I forgot to post the recipe for the sugar paste that I made to decorate Liana's cake earlier on. The pound cake recipe was posted here. Sugar paste has slightly different texture than fondant. It is more difficult to handle because it is less elastic & heavier but what I like about it is that it get hardened with crispy surface when left at room temperature after sometime.

INGREDIENTS:
425g Icing Sugar - sifted 
1 Egg White
1 tbsp Liquid Glucose

METHOD:
1. Stir in egg white & glucose into icing sugar until lumpy.
2. Knead until smooth.
3. Add color & shape as preferred.
Tips: 
a. Add color using tips of a satay stick at a time to achieve light color tone.
b. Dust with more icing sugar when rolling to avoid sticking to surface and keep flipping until reached the size required to cover the whole cake.
c. Cut into flower and alphabet shapes using fondant cutter.
d. Keep well in fridge for about a week - wrapped well using plastic cling.

BAHASA MALAYSIA VERSION
Baru teringat yang Along belum share resepi Sugar Paste yg Along buat untuk hiasan kek butter buah sempena harijadi Liana hari tu. Sugar Paste ni lain sikit dari tekstur fondant yg Along buat terdahulu. Ia nya lebih berat & mudah putus bila di angkat apabila digelek saiz yg terlampau besar. Sugar paste akan mengeras apabila di biarkan seketika pada suhu bilik dan menghasilkan tekstur yang cantik seperti royal icing.

BAHAN2:
425g Gula Aising - di ayak
1 bj Putih Telur
1 sb Liquid Glucose

CARA2:
1. Gaulkan putih telur & glucose ke dlm gula aising sehingga berketul2.
2. Uli sehingga licin.
3. Warnakan & bentukkan seperti di kehendakki.
Tip: 
a. Jangan masukkan pewarna banyak sekali gus. Hanya gunakan hujung lidi untuk menambah warna sehingga tone yg di kehendakki.
b. Taburkan gula aising sewaktu menggelek & balik2an supaya sugar paste tidak melekat ke atas meja sehingga saiz yg di kehendakki utk menutup sebiji kek.
c. Potong bentuk bunga & alphabet menggunakan fondant cutter.
d. Boleh di simpan dlm petisejuk selama seminggu sebelum di gunakan. Bungkus dgn plastik cling wrap.
