Apam Dot-Dot (Steamed Polka-Dot Muffins)

  A relative invited us for dinner just a couple of hours before it started. I wanted to bring something for them and decided to make this cute apams after reading Rima's story in similar situation. I was using my Trio steamer and hence my steamed muffins did not blossom like hers. Since I also had Apam Dot-Dot in my to-do-list, I decided to decorate the muffins accordingly.

I am glad that everyone at the relative's house enjoyed this & one piece is definitely not enough...

(Recipe retyped for ease of reference)
Makes 90 pcs
INGREDIENTS:
3 Cold Egg
250g Sugar
(HomeKreation: reduced to 200g)
10oz Softasilk/Superfine/Hong Kong Flour
2½ tsp Baking Powder
1 tbsp Ovalette
160g Coconut Cream
1 tsp Pandan Paste

FILLING (by HomeKreation):
100g Grated Coconut
3 tbsp Palm Sugar
2 tbsp Sugar
3 tbsp Water
1 tsp Cornflour
- Stir all in a small pot until well mixed. Cool before used.

METHOD:
1. Beat all the ingredients together, with high speed, until thick and fluffy.
2. Pipe batter into paper cup, half full.
Top up with ½ tsp coconut filling and cover with batter until almost full.
3. Steam for 15 mins with medium fire (big fire will cause it to blossom & spoil the dots).

UPDATE - To answer question on how to make the dots:
To make dots, mix some batter with different color & fill into a piping bag.
Cut just a small hole at end of the piping bag &  dot it on the base batter.
Tip: to ensure the dot is a nice circle shape, pipe it in a circle instead of on one spot.

10oz Tepung Softasilk/Superfine/Hong Kong
2½ st Baking Powder
1 sb Ovalette
160g Santan Pekat
1 st Pandan Pes

INTI (by HomeKreation):
100g Kelapa Parut
3 sb Gula Merah
2 sb Gula
3 sb Air
1 st Tpg Jagung
- Kacau semua dlm periuk sehingga sebati. Sejukkan sebelum di gunakan.

BAHAN2:
1. Pukul kesemua bahan2 sekali gus, dgn kuasa tinggi, sehingga pekat & kembang.
2. Paipkan adunan separuh penuh ke dlm kertas muffin.
Letakkan di tengah2 nya ½ st inti kelapa.
Tutup dgn adunan sehingga hampir penuh.
3. Kukus 15 mins dgn api sederhan (Jangan guna api besar takut apam merekah).

UNTUK MENJAWAB PERTANYAAN - CARA2 BUAT DOT:
Untuk buat dot, ambil satu bahagian dan warnakan dgn warna pilihan.
Masukkan ke dlm bag paiping & potong lubang kecil di hujung nya.
Buat lah bentuk dot di atas apam2 tadi.
Tip: Untuk mendapatkan dot yg cantik bulat, buat dot dgn gerakan circle & jgn picit setempat ... (harap2 paham... maaf takda video)
