Mutton Kurma (Kurma Kambing)

Hello everyone.... sorry for disappearing for quite sometime... too many things happening and just couldn't afford to sit behind the pc. Here I am now updating menu that I prepared a couple of weeks ago. I was too busy that I didn't even have time to do nice presentation but anyway would like to share the nice recipe.

INGREDIENTS:
700-800g Mutton
2 tbsp Ghee
3 tbsp Cooking Oil
Mixed Spices (Cinnamon, Star Anise, Cardamon, Cloves)
2" Ginger*
5 Shallots*
2 cloves Garlic*
1 Lemongrass*
1 Tomato*
3 Green Chili*
2 Candlenuts* (* blend) 
3 tbsp Kurma Powder
1 bowl Coconut Milk
1 Big Onion - sliced 
2 tbsp Roasted Coconut Paste
Salt & Sugar

METHOD:
1. Heat up ghee & oil, stir-fry mixed spices and blended ingredients*, kurma powder until fragrant.
Add in mutton and a bit of water to avoid burning.
Add in salt & sugar and cook until mutton is tender.
Add in coconut milk and cook until boiling for 10 minutes.
Add in big onion & roasted coconut paste.
2. Let it thicken a bit.
3. Serve with rice or roti.

Assalamualaikum para pembaca & kekawan semua. Maaf lah bulan Ramadhan ni tak sempat langsung nak update blog ni sebab banyak hal nak di uruskan. Baru-baru ini, my BIL meninggal dunia secara mengejut & Along pulang ke kampung sekejap. Banyak masakan yg Along tak sempat nak snap gambo nya sebab balik dari office kelam-kabut nak siapkan masakan tak sempat lah nak posing2. Yang lauk kurma ni pun tengok lah, sempat snap gambo leftover yang nak di simpan selepas berbuka puasa.... hehe. Lauk ni Along masak dua minggu sudah - walau pun gambo tak cun, nak kongsi juga di sini sebab sedap lauk ni, kot2 ada lak yg nak cuba.

BAHAN2:
700-800g Daging Kambing
2 sb Minyak Sapi
sb Minyak
Rempah Tumis (Kulit Kayu Manis, Bg Lwg, Pelaga, Cengkih)
2" Halia*
5 ulas Bwg Merah*
2 ulas Bwg Putih*
1 btg Serai*
1 bj Tomato*
3 bj Cili Hijau*
2 bj Buah Keras* (* blend) 
3 sb Serbuk Kurma
1 mangkuk Santan
1 bj Bwg Besar - hiris
2 sb Kerisik
Garam & Gula

CARA2:
1. Panaskan minyak sapi & minyak, tumis rempah campur, bhn2 blend*, rempah kurma sehingga wangi & pecah minyak.
Masukkan kambing & sedikit air supaya tidak hangit.
Masukkan garam, gula & masak sehingga daging empuk.
Masukkan santan dan masak sehingga menggelegak selama 10 minit.
Masukkan bwg besar & kerisik.
2. Masak sehingga pekat.
3. Hidangkan dgn nasi atau roti.
