It is Cencaluk season in Miri now... Fresh shrimps are not as much as last year season and therefore Cencaluk is more expensive this time. This is one of the simplest way to cook Cencaluk apart from eating it raw.... such an appetiser!

INGREDIENTS:
3 tbsp Cencaluk
Some Cili Padi*
1 Big Onion* (*sliced) 
A pinch Ikan Bilis / Anchovies
Lime

METHOD:
1. Heat up some oil & stir fry sliced chilies, onion & Ikan Bilis.
Add in Cencaluk & stir fry for a while.
Dish out & serve with lime.
2. Serve with white rice along other dishes (like curry).

A win-win monetary policy in Canada

We have published a working paper on structural breaks related to the introduction of  inflation targeting in Canada. The intuition behind the Lucas (1976) crituque is correct. The reader may enjoy the beauty, i.e. the simplicity and clearness,  of the integral approach.

Abstract
The Lucas critique has exposed the problem of the trade-off between changes  in monetary policy and structural breaks in economic time series. The search for and characterisation of such breaks has been a major econometric task ever since. We have developed an integral technique similar to CUSUM using an
empirical model quantitatively linking the rate of inflation and unemployment to the change in the level of labour force in Canada. Inherently, our model belongs to the class of Phillips curve models, and the link between the involved variables is a linear one with all coefficients of individual and generalized models obtained by empirical calibration. To achieve the best LSQ fit between measured and predicted time series cumulative curves are used as a simplified version of the 1-D boundary elements (integral) method. The distance between the cumulative curves (in L2 metrics) is very sensitive to structural breaks since it accumulates true differences and suppresses uncorrelated noise and systematic errors. Our previous model of inflation and unemployment in Canada is enhanced by the introduction of structural breaks and is validated by new data in the past and future. The most exiting finding is that the introduction of inflation targeting as a new monetary policy in 1991 resulted in a structural break manifested in a lowered rate of price inflation accompanied by a substantial fall in the rate of unemployment. Therefore, the new monetary policy in Canada is a win-win one.

Black Bottom Banana Cake


 Another marvelous banana cake recipe.... What I like about it, is using only one egg to produce a standard size cake and yet the cake is light & fluffy. Many others have tried it too with positive comments. I made this to return my friend's container (who gave me Kelupis the other day).

Makes 8" square (Original used 13"x9" pan which I find too big)
INGREDIENTS:
1/2 cup Butter - softened 
1 cup Sugar (I reduced slightly) 
1 Egg
1 tsp Vanilla Essence
1 1/2 cup Mashed Ripe Bananas
(6 Pisang Abu) 
1 1/2 cup Plain Flour*
1
tsp Baking Powder*
1
tsp Baking Soda*
1/2
tsp Salt* (* combined)
1/4 cup Cocoa
Powder

METHOD:
1. Cream butter and sugar until light and fluffy. 
Beat in egg and vanilla. 
Stir in the bananas. 
Add in flour mixture and mix well.

2. Divide batter into two portions.
Add cocoa to one portion & spread into the greased baking pan. 
Spoon remaining batter on top.

3. Bake at 170° for 30 minutes or until the a toothpick inserted near the center comes out clean.

Cool a wire rack.

Published Apology Over Ciplak Case



 
Actually I have no mood talking about this subject anymore. However, I just want to close the subject herewith and recognise the action taken by The Borneo Post to publish an apology over the ciplak case that I shared here earlier on. Although the guilty party is the Supreme Chicken, The Borneo Post has acted professionally on the matter.

Pumpkin & Pumpkin Leaves Dish (Again)

 My favourite dish.... with Sambal Belachan, salted fish & Fried Fish to go along, I can eat two plates of rice ...LOL.

INGREDIENTS:
½ small Young Pumpkin - diced

Young Pumpkin Leaves

METHOD:
1. Boil the pumkin until 3/4 cooked.

Add in the rest of ingredients & cook until boiled and veg are cooked.

2. Serve with white rice.

Regional Income Disparities Grow With Recession

According to analyses by The Economist discussed in one of their recent articles, regional income gaps appear to be widening in several developed countries with the recession. While regional income gaps can be slightly distorted due to regional cost of living differences, the income gap between the wealthiest and the poorest regions of several nations are profound.
In a method commonly used by OECD to compare the level of regional disparities between different nations, the first graph compares the GDP per head as a percent of the national average between the wealthiest regions and the poorest regions for each country. As this graph indicates, Britain has the largest regional difference in GDP per head. The second graph indicates that, not only are these regional disparities present, but have actually increased over the last decade in the United States, Britain and France.
Many policies have already been put in place to abate regional income gaps in these countries. For example, the European Union's "structural funds" are designed to transfer income from wealthier regions to poorer ones. However, these transfer policies have been largely unsuccessful in most countries. According to this article, policy that focused more on increasing productivity through improved education and skills in these areas would be more successful in diminishing these regional income disparities. Some income disparities are natural, however, as rural areas are less productive than urban centers. Allowing greater labor flexibility so that workers could more easily move to areas with more jobs available could also be helpful.

Income Gap Between Middle and Upper Class Continues to Expand

As a recent article on CNNMoney.com discusses, the gap between the middle and upper class has been increasing rapidly for the last several decades. As the following chart indicates, while the average income of the population has remained largely unchanged, those receving incomes in the top 5% have experienced a steady climb in their wages. One possible cause of this increased gap that this article mentions is increased globalization, which, according to the article, has benefitted American corporations at the expense of lower and middle class workers by providing access to cheaper unskilled labor. Globalization has also provided other opportunities for the wealthy to become even wealthier, such as investment opportunities and new markets. Another possible cause of the increasing gap that the article mentions is the erosion of collective bargaining with a decrease in Union membership over the last 30 years. Posted by Brittany

Nasi Dagang Kinabalu II

 I was trying to finish off the last portion of the black rice that I bought from Kinabalu mount last year end and complement it with whatever ingredients I can find in the freezer/fridge. So here what I came up with.... The organic rice fragrant was nice and delicious combination with the dishes please the whole family. There were Kembung Gulai Gayung, battered fried chicken, mixed salads and Sambal Belacan to accompany the Black Nasi Dagang.
 I am just too sleepy right now and sorry not able to type the recipe at the moment because it is very lengthy. If anyone interested, please shout & will update it later.... Good Night!

1. RICE
Wash 3 cups of Kinabalu Black Rice & 1 cup white rice & place it in a rice cooker.
Add 3 shallots & garlic (sliced) & 1" Ginger.
Add in 4 cups of thin coconut milk & salt. Cook using automatic rice cooker.
(I purposely did not add any flavour from either Pandan leaf, lemongrass or fenugreeks in order to enjoy the original fragrant from the organic rice)

2. KARI IKAN GAYUNG (Fish Curry)
Pound 5 shallots, 1 clove garlic, 1" galangal, 1 candle nut, 2 tbsp coriander seeds, 1 tsp cumin seeds.
Heat up some oil & stir fry pounded ingredients & 4 tbsp chili paste until fragrant.
Add in 1 lemongrass, coconut milk, 1 tbsp kerisik, tamarind piece, salt & stir until boil.
Add in fish & sliced green chilies.

3. RAW SALAD
Slice thinly long beans, cabbage, carrots, big onions, chilies, daun kesum (polygonum) & lemon.
Mix & add in 1 tbsp vinegar, salt & sugar.

4. SAMBAL BELACAN
Fry chili, belacan, ikan bilis & then pound finely. Add salt, sugar & lime juice to taste.

How to define success?

How does your association define success? Success comes in many flavors. Perhaps the important thing is to identify and implement what works for you. Thereafter communicate, communicate, and communicate.

So, what does your association value most? Is it performance? How about relationships? Perhaps its competencies or credentialing. Each organization is different when it comes to what matters most, not to mention why it matters to us. So, to define success, there has to be agreement on what matters most. The situation, which may change over time, has a lot to do with defining success. For example, an association in a protracted, downward financial spiral, for example, may define success very differently than an association whose growth has been 30% per year for the past five years.

Here are some important success categories, with suggestions how they might be used.

1. Strategy--Does our association have a sustained record of performance to plan over time (successful strategy is not measured in 12-month cycles and someone’s pet agenda for the year)?

2. Voice of the customer—Who are our (right) customers and how do you know if they are satisfied (yes, there may be “wrong” customers)?

3. Financial—Do we have sustained performance over time meeting budget or ending each year with positive variances (no margin, no mission)?

4. Business operations—What is the record of new program development and existing program retirement over the past 5 years (are you still doing what you did 5 years ago)?

5. Learning & growth—What investment do we make on a consistent annual basis for volunteer’s & staff’s learning and growth in their association roles (no investment, no dividends)?

When you have figured out what matters most to your association and how you will measure success, it’s time to think about annual communications planning and the year’s key audiences and messages. Key messages are important for association leaders—volunteers and staff—to focus on, repeat and reinforce. The messages help everyone to understand and stay on the same page.

There are many useful ways to define organizational success. And to communicate effectively about it. When there is consensus about success, your volunteers, staff and external relationships will thank you, knowing what to expect and how to help. How do you measure organizational success?

Liver Serunding (Serunding Hati)

 Just wanted to clear the beef liver stock in the freezer which has been in it for so long. Inspired from the popular local dish in Miri using beef lungs called "Hati Boyak" (crocodile heart).

INGREDIENTS:
400g Beef Liver - sliced small pieces 
1/2 tsp Turmeric Powder
8 Shallots*
2 cloves Garlic*
1 tbsp Fennel Seeds*
2 tbsp Coriander Seeds*

3 tbsp Chili Paste
1/4 cup Thick Coconut Milk
Salt & Sugar

METHOD:
1. Rub beef liver with salt & turmeric powder.
Shallow fry until half cook & dish out.

2. Reduce the amount of oil & stir fry chili paste & pounded ingredients until fragrant.
Add in coconut milk, salt, sugar & liver.
Stir fry until dry like serunding.

Week 35

Spring and Winter have been at it all week.  One day it's Spring and the next day it's Winter and snowing again.

The steel girders for the roof are being placed and the concrete for the first floor was poured this week.  The pace is brisk and constant.  Can you imagine what a blog of the Salt Lake Temple would be like?  Forty years!  This one will be done by next year.

I hope I don't run out of steam before it is completed.

Oat Porridge (Bubur Oat)

 Healthy and filling breakfast..... This is one way of preparing delicious oatmeal breakfast and suitable for all range of age from toddlers to adults. My hubby, sons and Liana all like it.This is one of our regular menu for breakfast.

Serves: 5-6 persons
INGREDIENTS:
1 packet (200g) Instant Oatmeal
1 Chicken Breast - minced 
1 Carrot - diced into tiny bits 
4 cloves Garlic - chopped 
Salt & Pepper
Garnish - Fried Onions, Chili, Spring Onion

METHOD:
1. Heat up few tbsp oil  stir fry garlic until golden.
Add in chicken & stir until well mixed.
Add in 2 liter of water, salt & pepper.
Cover & let it boil & simmer for few minutes.

2. Add in oatmeal & let it boil.
Serve immediately with garnishes.

Baked Wrapped Fish (Ikan Pais)

 This is kampung style dish and my favourite. Both my mother & MIL are very good in making this with their own different version. Here is my own version....

Fish
- cut to small pieces (size of half Kembung) 
3 Shallots*
1 clove Garlic*
1 Lemongrass*
1-2 Red Chili*
Few Bird-eye Chili*

2" Turmeric Root*

1 Turmeric leaf**

METHOD:
1. Mix fish with all the ingredients.

2. Lay some Cengkil Leaves on a piece of banana leaf.

Place fish on it & wrapped. Secure ends with tooth picks.
Place on a griddle &
flip occasionally until cook.

Custard Teacake

 This is the most popular cake recently and I couldn't resist the temptation too.... Due to my greediness, I double the custard filling & as a result my teacake turned out to be molten cake... no regret at all, the more filling the better...! It was such a delicious cake as confirmed by everyone who has tried it but the size is too small that we finished it the moment it came out from the oven. We gave the custard no chance to set and hence it ooze out like erupted volcano....super delicious...!

(Makes 7" round)
INGREDIENTS:
125g Butter
1/3 cup Caster Sugar
1 Egg (Gred A)
3/4
cup Self Raising Flour
1/2
cup Custard Flour
1/2 tsp Vanilla
Essence
FILLING:
1 tbs Custard Flour
1 tbs Caster Sugar
2/3 cup Fresh Milk
15g Butter
2 tsp Vanilla Essence

METHOD:
1. Mix all filling ingredients except butter & VE.
Cook above slow fire until thicken.
Off fire, add in butter & VE.
Let it cool.

2.  Beat butter & sugar until creamy.
Add in egg & mix until fluffy.
Ad in VE.
With slow speed, mix in both type of flour until combined.

3. Spread 1/2 portion into a greased tin.
Make slight dent in the middle & spread custrad in the middle.
Cover with the remaining batter.

4. Bake 170C fora 30 minit (I'll reduce it to 25min next time).
 

5. Cool before slicing (We chomp the whole cake right after taken out from oven...delicious!)

CARA2:
1. Satukan semua bahan untuk kastard, kecuali mentega dan esen vanilla.
Masak dengan api perlahan sambil dikacau hingga pekat.
Padam api, tambah mentega dan esen vanilla.
Sejukkan.

2. Putar mentega dengan gula sehingga berkrim.
Masukkan telur dan putar hingga kembang.
Tambah esen vanilla.
Perlahankan kelajuan, masukkan tepung naik sediri + tepung kastard sedikit demi sedikit sehingga rata.

3. Ratakan 1/2 adunan ke dalam tin yg di gris dan buat sedikit lubang ditengah2nya. Tuang & ratakan kastard dan tutup dengan baki adunan.

4. Bakar 170C selama 30 minit (Next time Along cuba 25minit sahaja).
 
5. Sejukkan sebelum dihidangkan (Along makan panas2 best!)

General Electric Avoids Taxes

According to a recent New York Times article, despite General Electric's success in 2010, the corporation paid no taxes and actually received a tax benefit of $3.2 billion. This is due to a combination of the corporation's aggressive lobbying and the corporation's accounting strategy. The following charts included in the article illustrates General Electric's success in tax reduction, showing both General Electric's profits and decrease in tax burden:

As the article also points out, the US corporate tax rate is among the highest in the world and is as large as 35% for some corporations. Because of this, corporations, like General Electric, are becoming increasingly saavy in reducing their tax burden through tax law loopholes, keeping profits offshore and other accounting mechanisms. There have been some complaints from corporations that the corporate tax rate is too high and that it is limiting their international competitiveness. This has lead President Obama to announce that he is considering an "overhaul" in the corporate tax system although cuts might be delayed by increasing efforts to cut the budget deficit. Detroit Searching for Hope amid Loss

The population core of Detroit has experienced a drastic depletion while catching the nation by surprise. National media publications are reporting on gloomy census findings on a metropolis already beleaguered from political scandal, education crisis and uncertainty in manufacturing employment. These findings were distributed by demographer William Frey of the Brookings Institute and director of SSDAN (Social Science Data Analysis Network).

The findings report nearly 100,000 more people left Detroit than the mass exodus of New Orleans caused by the devastation of Hurricane Katrina. Detroit once thrived and bustled with 2 million people in the 1950’s. That figure receded slightly to 1.5 million in the 1970’s. During the 1970’s, Detroit would go on to lose 300,000 residents, but with a large population base the figure did not have serious implications. At present day, Detroit loss 237,500 residents during the previous decade which left the total population standing at 713,777.

Most interesting is 183,393 or 25% of the African American population have uprooted from Detroit also within the past decade. The migration patterns of African Americans are important as the city once held an 83% African American population. William Frey throerized in the New York Times piece that suburbs are the source of the population drain, causing a pulling affect on the city once again, similar to past White migration patterns between urban and suburban communities. The mass departure landing in neighboring suburbs also signal that many ties to Detroit will continue to exist creating a new expanded Detroit.

Last, residents of Detroit are learning another consequence of population drain: when a city loses a core of people, the loss also captures some soul that identified the city. While residents hope for economic vitality on the horizon they also cannot deny the void of a hollow city.

Pineapple Pachrey II (Pacri Nenas)

 There was half pineapple a balance from yesterday's crab dish and I turned it into Pineapple Pachrey. This dish also reminds me of my mother's cooking because she will definitely cook this every time I visit her. It is my favourite but my own cooking can never match my mother's.
I have posted the recipe earlier here but herewith again with slight modification and with BM translation.

INGREDIENTS:
1/2 Pineapple
- cut into semi-circle shape

3 Shallots*
1 cloves Garlic*
1" Ginger*
(* sliced)
Some Rempah Tumis (Cloves, Cinnamon, Cardamon & StarAnise)
2 tbsp Curry Powder
- add some water to form paste
1 tbsp Kerisik (Toasted Coconut Paste)
1 bowl Coconut Milk
1 tbsp Sugar or to taste
Salt


METHOD:
1. Boil pineapple with 5 pcs of cloves until quite soft.

Drain.

2. Heat up few tbs oil & fry sliced ingredients & Rempah Tumis.
Add in curry paste & stir until oil emerged on the surface.
Add in Kerisik, coconut milk, pineapple slices, salt & sugar.

Let it boil and the gravy is thicken.

3. Serve with rice.

BAHAN2:
1/2 biji Nenas
- cut into semi-circle shape

3 ulas Bwg Merahs*
1
ulas Bwg Putih*
1" Halia*
(* sliced)
Rempah Tumis (Cengkih, Kulit Kayu, Pelaga & Bg Lawang)
2 sb Serbuk Kari
- campur sedikit air
1 sb Kerisik
1 mangkuk Santan
1 sb Gula / secukup rasa
Garam

CARA2:
1. Rebus nenas dgn 5 biji cengkih sehingga lembut. Tapis.

2. Panaskan sedikit minyak & tumis bhn hirisan & Rempah Tumis.
Masukkan rempah kari & kacau sehingga pecah minyak.
Masukkan Kerisik, santan, nenas, garam & gula.
Masak sehingga menggelegak & kuah menjadi pekat.

3. Hidangkan dgn nasi putih atau nasi minyak.

Crabs & Pineapple in Cili Padi Coconut Broth (Ketam Masak Lemak Cili Padi)

 I'm in a mood for Masak Lemak Cili Padi lately. Few days ago I posted Tempe Masak Lemak and now Crab & Pineapple Masak Lemak. As usual, I used skimmed coconut milk so less creamy than the typical Perakian's version (actually the creamier the more delicious but controlling my intake for health reason).

I've been thinking about crabs lately but sea crabs are rare here and only found baby size crabs....

INGREDIENTS:
1/2 kg Crabs
1/2 Pineapple - sliced 
Some Cili Padi*
1 Green Chili *
4 Shallots*
2" Turmeric Root* (* pounded) 
1 Turmeric Leaf
1/2 wok of Coconut Milk (enough to cover crabs & pineapple)
Salt

METHOD:
1. Place all ingredients in a deep wok & let it boil while stirring all the time.
2. Cook until crabs are done.
3. Serve with white rice.

Ketam Masak Lemak Cili Padi

1/2 kg Ketam
1/2 biji Nenas - hiris2
Cili Padi*
1 bj Cili Hijau *
4 bj bwg Merah*
2" Kunyit Hidup* (* tumbuk)
1 helai Daun Kunyit
1/2 kuali Santan - cukup utk tenggelamkan ketam & nenas
Garam

CARA2:
1. Bubuh kesemua bhn ke dlm kuali & masak sehingga menggelegak sambil di kacau selalu supaya tidak meruap.
2. Biar sehingga isi ketam masak sepenuh nya.
3. Hidangkan dgn nasi putih.
